Ingredients
2 oz. Light Rum
Simple Syrup (to taste, typically 1 oz.)
Fresh Limes (half a lime, cut into wedges)
Fresh Mint Leaves (about 10-12 leaves)
Soda Water (to top off)
Ice (crushed or cubed)
Directions
- Start by placing the fresh mint leaves and lime wedges into a pint or Collins glass. Add the simple syrup. Gently muddle the ingredients together using a muddler or the back of a spoon. The goal is to release the lime juice and the mint’s essential oils, without pulverizing the leaves.
- Pour in the light rum over the muddled ingredients.
- Fill the glass with ice. Cap the glass with a shaker tin and give it a good shake to mix the ingredients thoroughly. Alternatively, you can roll the drink by pouring it back and forth between the glass and the shaker tin a few times.
- Remove the shaker tin, and top the drink with soda water to your taste.
- Drop in a few extra mint leaves and lime wedges into the drink for garnish. Give it a gentle stir to combine everything.
