History

The exact origins of the Paloma are somewhat murky, but it’s believed to have emerged in the mid-20th century in Mexico. Some credit the creation to Don Javier Delgado Corona, the legendary bartender and owner of La Capilla, a bar in the town of Tequila, Jalisco. The Paloma, named after the Spanish word for “dove,” likely gained popularity due to its simplicity and the readily available ingredients in Mexico, particularly the abundance of fresh limes and grapefruit soda.

While the Margarita may have garnered more international fame, the Paloma is a staple in Mexican culture, often enjoyed as a casual, refreshing drink on a hot day. Its popularity has spread across the globe, becoming a go-to choice for those seeking a cocktail that’s both easy to make and immensely satisfying.

Taste Profile

The Paloma is a perfectly balanced cocktail that dances between sweet, sour, and bitter. The tequila brings a robust, earthy warmth, while the lime juice adds a bright, tart note. Agave nectar smooths out the edges with its subtle sweetness, making the drink more approachable. The grapefruit soda or juice introduces a refreshing bitterness and a crisp, citrusy burst that ties all the flavors together. The result is a cocktail that’s light, refreshing, and utterly drinkable, with just the right amount of complexity to keep you coming back for more.

Ingredients

  • 2 oz. Tequila

  • 2 oz. Lime Juice

  • 1 ½ oz. Agave Nectar

  • Grapefruit Soda or Fresh Grapefruit Juice

  • Soda Water

Directions

  • In a shaker, combine 2 oz. tequila, 2 oz. lime juice, 1 ½ oz. agave nectar, and grapefruit soda or fresh grapefruit juice. If using fresh juice, shake with a splash of soda water. Shake vigorously to ensure all ingredients are well-mixed and chilled.
  • Strain the mixture over ice into your chosen glass. This method keeps the drink cold and smooth, avoiding any large ice chunks that could dilute the flavor
  • Garnish with a lime wedge or wheel on the rim of the glass. The lime adds a pop of color and an extra citrus aroma with each sip.
  • The Paloma is best enjoyed ice-cold, making it the perfect companion for warm weather or any occasion that calls for a refreshing, easy-drinking cocktail.

Notes

  • The Paloma, with its refreshing blend of tequila, citrus, and a hint of sweetness, is a testament to the joys of simplicity in cocktail making.
